The legends are true!!
Take half a bag of frozen cauliflower (25 calories per serving) and one can garbanzo beans (50 calories per serving). Blend garbanzos beans in food pro with light mayo and olive oil until smooth. Remove. Put in casserole dish. Add cauliflower to food pro. Blend with salt, white pepper, and light butter until smooth. Add to casserole dish and mix.
Okay, it needs some work on the consistency but – Holy crap! It really tastes like mashed potatoes! I now have a healthier comfort food only minutes away at my disposal!
P.S. – Why is this amazing? Because I have hated cauliflower all of my life.
