Okay, so a miracle from a point of misdirection. Sunday morning I was happily cooking some omelet action and waffles for some of my friends. Not knowing who was going to want waffles or omelets, I decided to just cook a large amount of both.
So I was watching my 4 or 5 egg omelet base bubble up, and it got me thinking about this Spanish Tortilla recipe I was watching on America’s Test Kitchen last weekend… And no, we’re not talking about the amazing flat circles you make breakfast tacos with or throw at Texas Tech.
Spanish Tortillas are more like an egg bake… Basically you fill a skillet with a mixture of cooked down onions and potatoes (or whatever ingredients you like) and scrambled up raw eggs, cook until one side has the consistency of an American omelet, then flip over and continue to cook… Until you get something like this:
So here I am, poking around at this large skillet of eggy goodness and I think to myself, “I bet I can flip this bitch just like on the tv!” So I carefully, with potholder, skillet, and lid, flip this layer of 4 or 5 eggy goodness and several tablespoons of sour cream over.
“Success! I did it!”
“Shit.”
“This is no longer an omelet.”
“Think, Mer, think.”
“Okay, I got this. “
I pull a page from one of the darkest dieting nights and attempt to make a makeshift pizza. It totally looks like pizza dough. I quickly make a pizza sauce of one part green salsa and one and a half parts of fat free sour cream. I top the pizza with the onions I’d caramelized previously, fresh cilantro, and Mexican mixed cheese, and put it in the oven under warm to melt the cheese a bit.
…And everyone loved it!
So the next time you really want pizza… Try this – seriously it’s got to be like 600 – 900 calories less than a real pizza…
