Someone brought this to work today for a dual birthday food day. It’s probably the only plate that got cleared out.
Okra Salad
2 – 24 oz. bags of frozen breaded okra
3 – bunches of green onions (to taste)
2 – tomatoes (diced)
12 – slices of bacon fried crisp
Marinade:
1 cup sugar
2/3 cup vinegar
1/2 cup oil
Mix vinegar and sugar until disolved, add oil, set aside.
Line baking sheet with foil, spray with Pam, pour frozen
okra and bake until crisp and golden in the oven at 400 degrees.
Slice green onions and dice tomatoes.
When okra is cooled, add tomatoes, and onions. Pour marinade
over okra mixture. Mix well and marinade overnight.
Before serving, crumble bacon over okra, mix well, add salt (if needed) and
pepper before serving.
